Ingredients
Agave Tequilana Weber also known as Blue Weber Agave flourishes across our home of Jalisco. No two piñas are created equally nor mastered the same. At Augusto, we select only piñas aged a minimum of 7 years, carefully nurtured with years of dedication and expertly selected to ensure unparalleled quality and flavor.
Preparation
Perfect piñas do not make themselves into Augusto, Nature helps them along the way. Our piñas our cooked in brick ovens (“Hornos”) for up to 48 hours to release all the Agave nectar that will become Augusto. This nectar and the remaining extracts from the pulp after milling are sent to stainless steel vats where they ferment with naturally occurring yeast through the air from the surrounding fields.
Distillation
Adding nature to nurture, our fermented agave is then transferred to copper pot stills where it is then distilled twice and cut with a lot of heart but a very measured inclusion of heads and tails as divined by our maestro tequilero, to get the perfect balance of ripe agave, fruity and floral notes for all Augusto.
Ageing
We then entrust our Augusto plata to the specially handcrafted casks from Toneleria Juan Pino, filled with the finest sherry from González Byass in Jerez, Spain. Augusto is aged in PX and Oloroso Sherry Casks to create our signature Reposado, Joven, single cask finishes and other expressions.
Blending
Cycles of tasting, ageing, experimenting and careful iteration led us to the Profile that brings Augusto to life and we continuously evolve to improve the experience. First and foremost is the liquid, additive free agave spirits that hero the piñas. Each batch and expression may be nuanced yet clearly represents the Augusto profile promise.
Bottling
Our customised metallic parts and bottles pay homage to the tequila craft and are assembled by hand with watchful eyes to inspect and remove any inconsistencies that do not meet expectations. The bottles are filled under stringent conditions to ensure hygiene and consistency while allowing for the manual touches to its complex design.
